The standard steel pizza ovens lose heat quickly. While the new stone wood fired ovens will maintain their heat over a long period of time and keep a more constant temperature. The same mix is used in industrial kilns. It can be put on the grid or simply direct onto the coals. It can even just be covered in colas or make a fire on top and the entire oven will heat up evenly.
